Remember when I professed my love for almond flour last week? Well, I’m still in love with it, so I thought you guys might want to see what it’s all about– and maybe you’ll fall in love with it, too? ;)

  1. I actually have never used almond flour and my MIL just gave me an almond flour cookbook! When I bake, I try to sneak some flax in the batter – that usually ups the nutrition!

  8. I like to use almond flour as a substitute for flour in making pancakes. The result is a light pancake with a hint of sweetness that doesn’t require syrup. Yum!

  9. I love canned 100% pure pumpkin. I mix it with brownie mix (no other ingredients) and bake as directed. The results: yummy and healthy. Paired with a glass of almond milk it tastes sinful!

  10. Call me crazy but in some recipes (especially pancakes) to sub for some oil and add sweetness I like to add mashed up banana! Delish!

  11. I’ve started using oat flour in some of my baked goods—it’s healthier than all-purpose and less “wheat-y” than whole wheat. Perfect balance!

  17. I use Chia seeds in cornbread in place of oil. Mic Vhia seeds with a little water and let set for a few minutes then add to cornbread. Never tried almond flour.

I use whole wheat flour when baking and also substitute splenda in for sugar (sometimes this does not always yield a successful recipe, lol), applesauce for oil and I have also done pumpkin in place of oil or any other ingredients in a cake mix. One of the best ways to cut down on calories in a cake mix is to add a entire can of diet soda to the mix and nothing else – diet rootbeer, cola, etc. for darker cakes (i.e. red velvet, chocolate) and diet z-up, sprite, ginger ale, etc. for lighter cakes (i.e. white, yellow, lemon, strawberry)…..it is amazing how fluffy the cakes come out and you have eliminated lots of excess calories :) Try it! I would LOVE to try this Almond Flour as I have good all good things about it and I LOVE to bake. Pick me, pick me, lol!

  30. I’m a college student so I bake for my housemates frequently. Whenever I make red-velvet cupcakes with cream cheese frosting, I sub in fat-free cream cheese for the real stuff. I also swap 1/2c of vegetable oil with equal amounts of applesauce. No one can tell the difference, and the girls appreciate the lighter treat!

  34. I’m a fan of swapping out all purpose white flour for whole wheat pastry flour. The pastry flour isn’t as dense as regular WW flour, so the texture of the baked goods isn’t compromised. :)

  65. I like to add no sugar applesauce, flax meal, and chia seeds to my baked goods. Sometimes I’ll reduce the sugar content if I think it’s too much. For fruit muffins, I always add 1.5-2x the amount of fruit while keeping the batter the same.

  83. I’ve done the applesauce substitute before, and also added flax. I’m not a big baker, but now that I’ve gone GF, I am very interested in trying all the alternatives to wheat flour. I’d love to have some almond flour in my pantry since it seems to versatile (and Bob’s is a respected brand).

  88. Anytime I bake, I add some chia seeds, ground flax or wheat germ (sometimes all three) to the mix. It rarely changes the flavor and makes me feel better about having a treat. Plus I sub in whole wheat flour for white and coconut oil for veggie whenever possible.

  115. I like replacing some of the butter with applesauce, flour with whole wheat flour, eggs with flax, and love the addition of dried fruit. I also like using mashed bananas, Greek yogurt, pumpkin, nuts, oatmeal (sometimes I blend it into oat flour). The list could go on and on.. :) I have never tried almond flour, but am curious to know how it tastes.

  117. Use skim milk with a squeeze of lemon juice in place of buttermilk. Cuts fat and saves you a trip to the store if you don’t keep buttermilk on hand all the time (who does?).

  122. I love to sub applesauce or pumpkin in for part of the fat required in a recipe. Even if it’s a healthy fat, it cuts calories and adds nutrients and moisture, especially pumpkin! I also usually use less sugar than called for. I don’t need baked goods to be super sweet, and it’s better for me.

When I am baking I love to swap out the oil for any kind of fruit puree, use Stevia instead of sugar, coconut butter instead of Earth Balance or oil, and whole wheat flour instead of white. I love using almond meal/flour when I make cookies! It makes them have a much more natural flavor without having to add a lot of other ingredients! Same goes with oat flour, but I LOVE almond so much more! :)

  157. I always swap unsweetened applesauce for oil and use unsweetened almond or coconut milk for dairy! Easy swaps that make each recipe a bit healthier! I have celiac, so am excited to start using almond meal/flour in place of some of the less healthy gf flours (i.e. white rice or potato) :)

My niece has recently been diagnosed with needing to be GLUTEN free, so I have been helping my sister learn all about changing what her whole family eats, and one addition that sounds great is Almond Flour! We have experimented with Flax Eggs, too, which are great! Your almond flour pancakes sound great for my niece!
