My husband and I don’t eat a lot of meat, mostly because it’s expensive to buy. Boneless chickens breasts (NuVal score: 39), for instance, are pricy and always seem to put us over our grocery budget. Sure, chicken breasts are easy and quick for weeknight dinners, but buying just the breasts is costly because I’m paying for the convenience.


I realize that not everyone has time to roast a chicken midweek, but if you cook it on the weekend or Sunday evening, you can incorporate the meat into multiple meals throughout the week. My husband and I ended up eating chicken in three different meals last week!

I’ve pretty much given up buying chicken breasts – I figure that if I’m just going to mask any chickeny flavour, there’s just no point in spending all that money! Far better to use potato or some other favourite vegetable.
I’ve discovered that I love boneless chicken thighs – they have so much delicious flavour that they don’t really need anything. It’s not as economical as whole chickens, but I hate dealing with bones!

I bought a chicken a few weeks ago, froze it, and roasted it this past week. On a Tuesday! I had it defrosting all day and then I had the husband roast it after he got off work and while I was in Zumba. After I got back, I worked on the sides while the chicken was finishing up, so it all timed out perfectly!
I don’t know if this is true everywhere, but the Whole Foods near me always puts their roasted whole chicken on sale for $6-7 on Tuesday. You can just take the meat off the bone, put it in tupperware and have chicken all week! Or put it the freezer, of course. They probably have some sort of similar deal at the other stores.
I’ve bought a whole chicken once and I don’t know my I stray away from it. It’s perfect for leftovers and always tastes amazing.

Your chicken was beautiful, I agree. I’m in Vancouver, Canada, and I’m happy that the Save On Foods has cycles where they sell frozen organic local chickens for $12 or $13 I love Whole Foods, but I’m also glad that I can find less expensive deals here in other places. It’s odd to go online and check the big food chains deals, but sometimes they amaze me with a really good deal that will help my budget.
