
When you’re talking cookies, homemade oatmeal raisin variety can be a relatively nutritious option since they are made with old-fashioned oats and unsweetened raisins. But, you can further “trade-up” the nutrition of your regular oatmeal raisin cookies by adding mashed sweet potato (NuVal score: 96) to your recipe. Plus, it’s a fun way to sneak a serving of vegetables into your dessert!
Makes 16 cookies
Ingredients:
- 1 cup Quaker Old-Fashioned Oats (NuVal score: 57)
- 1/4 cup all-purpose flour
- 1/3 cup packed brown sugar
- 1/2 cup shredded coconut
- 1/2 cup Sun Maid Raisins (NuVal score: 91)
- 1 cup mashed sweet potato (NuVal score: 96)
- 1/4 cup Wesson 100% Canola Oil (NuVal score: 24 )
Directions:
- Pre-heat oven to 350*F.
- Combine all ingredients in large mixing bowl. Blend well.
- Spray baking sheet with non-stick cooking spray.
- Use a tablespoon to portion cookie onto baking sheet. Flatten cookies with back of spoon.
- Bake for 18-20 minutes.
- Remove from oven. Cool on wire rack.
Eat and enjoy!

I saw this recipe and had to try it, immediately. I’d been looking for an oatmeal cookie recipe for several days. I didn’t have any sweet potato and didn’t want to go to the store. I improvised and used about 1/3 cup peanut butter and 2/3 cup plain yogurt. I think they turned out very well. The peanut butter dominates the flavor.
