They hold the calcium and other minerals that make salmon so nutritionally rich. Just drain the can and mash the whole salmon together with a fork. It's easy and tastes just fine. I wouldn't need it, though; our family bought a huge 13-pound salmon two days ago, and my mom filleted it herself. It's rather huge.
