I <3 Brussels Sprouts

Why is it that Brussels sprouts get such a bad rap? From the time that we are little kids, it seems like we are brainwashed to think that Brussels sprouts are “gross.” Most people associate these tiny, little cabbages with a weird and unappetizing smell, which typically comes from overcooking them– like boiling them way past their nice, bright-green color.

My favorite way to eat Brussels sprouts by roasting them. Man, they are tasty! Plus, roasting them in the oven is practically fool-proof (unless you burn them!). My Brussels sprouts almost always come out perfectly cooked when I use this recipe below. And, the best part about these delicious veggie orbs is that they are loaded with vitamins and fiber and score a 94 on the NuVal scale.

Roasted Brussels Sprouts

Ingredients

  • 1 1/2 pounds Brussels sprouts
  • 3 tablespoons good olive oil
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Directions

Preheat oven to 400 degrees F.

Cut off the brown ends of the Brussels sprouts and pull off any yellow outer leaves. Mix them in a bowl with the olive oil, salt and pepper. Pour them on a sheet pan and roast for 35 to 40 minutes, until crisp on the outside and tender on the inside. Shake the pan from time to time to brown the sprouts evenly. Sprinkle with more kosher salt ( I like these salty like French fries), and serve immediately.

  2. I’ve only had brussels sprouts a few times during my life, and I got educated about them in a bad way. They were prepared so that they were bitter and nasty… Blegh! I haven’t seen them around in supermarkets in China at all, but if I do see them I’ll definitely give this recipe a try! Thanks! :)

  3. I love sprouts and love eating them with Christmas dinner. It’s the only time I have then really so I might try this as a way of getting them into my diet more.

  4. I too just adore Brussels sprouts! roasted or steamed I love them all! I also came across an amazing recipe where you roast them with kimchee! delightful!

  5. I ate my first one at age 28! My mom never made them growing up so I never bothered to try them on my own.

    I think it’s one of those foods that if it’s cooked/prepared wrong and you have it that way you write it off for good.

    I actually planted some in my garden this year. It should be interesting to see how they turn out in Minnesota.

  9. Brussel sprouts are a new favorite food in our house! Try it with a little sauce made of two tablespoons mustard (I used Dijon) and two tablespoons lemon juice. Just mix the two together and spoon some over the roasted sprouts. SO GOOD!
