Sweet Potato Shepherd’s Pie

This week’s Trade Up Recipe is from Heather at Getting Healthy with Healther. Heather is a 22-year-old fitness and health food enthusiast, who enjoys reading and learning about about how and why different foods help her body and fuel me for an active lifestyle.  She also loves cooking and creating new, healthy meals, like her Sweet Potato Shepherd’s Pie.

Ingredients for potatoes:

  • 2 medium sweet potato, peeled and diced (NuVal score: 96) [Trade up from russet potatoes (NuVal score: 93)]
  • 1 medium Yukon gold potato, peeled and halved
  • 2 tbsp Chobani plain greek yogurt (NuVal sc0re: 94) [Trade up from Breakstone's Sour Cream (NuVal score: 25)]
  • 1/4 tsp each paprika and garlic powder
  • 1/8 tsp sea salt and pepper

Ingredients for filling:

  • 1 tsp olive oil
  • 1.25 lb lean ground turkey (NuVal score: 33) [Trade up from ground beef (NuVal score: 30)]
  • 2 large carrots, peeled and diced
  • 1 sweet onion, diced
  • 4 ounces sliced crimini mushrooms
  • 1/4 tsp sea salt and pepper
  • 2 tbsp flour
  • 1/2 cup low-sodium chicken broth
  • 2 tsp Worcestershire sauce

Directions:

Pre-heat your broiler to 500 degrees.  Bring a large pot of water to a boil with the potatoes in it.  Boil for about 12-15 minutes, or until the sweet potatoes are fork tender.

In the mean time heat the oil in a large skillet over medium-high heat.  Add the turkey and break it up occasionally.  Cook until the turkey browns then add the carrots and onions.  Cook for 2 minutes then add the mushrooms, sea salt and pepper.  Saute the mixture for about 5 minutes then add the flour and cook for 1 minute.  Next add the chicken broth and worcestershire sauce.  Cook for 2-3 minutes until the mixture thickens.

Drain the potatoes when they’re done.  Transfer them to a bowl (or your standing mixer).  Add the yogurt, paprika, garlic powder, salt and pepper and using a hand mixer or standing mixer beat until smooth.

In a pie dish add the turkey mixture and top with the sweet potato mash.  Broil for 5 minutes – the top should be just barely browned in a few spots.

This yummy, hearty pie serves 6.
